- 400 g octopus
- 1 cup short-grain rice
- 1 large onion
- 2 cloves garlic
- 4 cups fish stock
- 1 tbsp olive oil
- 1 tbsp paprika
- Salt to taste salt
- Pepper to taste black pepper

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.

Add the octopus pieces to the pot, stirring occasionally for about 5-7 minutes until they start to change color.

Stir in the paprika, then add the rice, mixing well to coat all the grains with oil and spices.

Pour in the fish stock, and season with salt and pepper. Bring to a boil, then reduce the heat to low and cover the pot.

Cook for about 20-25 minutes or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

Once cooked, remove the pot from the heat and let it sit covered for 5 minutes to finish steaming.

Fluff the rice with a fork and serve hot, garnished with fresh herbs if desired.
