IngredientsWhat you need
- 500 grams beef heart
- 1 cup red wine vinegar
- 2 tablespoons aji panca paste
- 4 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 skewers wooden or metal
Method
- 1
In a large bowl, combine the red wine vinegar, aji panca paste, minced garlic, cumin, salt, and black pepper to create a marinade.
- 2
Add the beef heart cubes to the marinade and mix well. Cover and let marinate in the refrigerator for at least 2 hours, preferably overnight.
- 3
If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- 4
Preheat a grill or grill pan over medium-high heat. Thread the marinated beef heart cubes onto skewers.
- 5
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the beef is browned and cooked to your desired doneness.
- 6
Remove the anticuchos from the grill and let rest for a few minutes.
- 7
Serve hot with boiled potatoes, corn, or a side of spicy sauce for dipping.
