- 2 cups black-eyed peas
- 1 medium onion
- 2 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 4 cups vegetable oil
- 1 cup shrimp
- 1/2 cup dendê oil
Method

Drain and rinse the soaked black-eyed peas. Peel the skins by rubbing the peas between your hands in water, then remove the skins.

Blend the black-eyed peas in a food processor until smooth. Add the chopped onion, minced garlic, salt, and cayenne pepper. Blend again until well combined.

Heat the vegetable oil in a deep pan over medium heat. Once hot, take a spoonful of the batter and carefully drop it into the oil to fry.

Fry each acarajé for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

In a separate bowl, mix the cooked shrimp with dendê oil and season to taste.

Cut the fried acarajé in half and fill them with the shrimp mixture.
