Ingredients

  • 1 cup yogurt
  • 1 cup water
  • 1 cup rice
  • 1 egg large egg
  • 1 tablespoon dried mint
  • 2 cups chicken or vegetable broth
  • 1 tablespoon butter

Method

    In a pot, combine chicken or vegetable broth and one cup of water. Bring to a simmer over medium heat.

    Add the rice to the pot and cook until tender, about 10 minutes.

    In a bowl, whisk together yogurt, beaten egg, and a pinch of salt until smooth.

    Gradually add a ladle of hot broth to the yogurt mixture while continuously stirring to temper the yogurt.
