- 4 cups chicken broth
- 1 cup carrots
- 1 cup celery
- 1 cup onion
- 2 cloves garlic
- 1 cup mushrooms
- 1 cup cream

In a large pot, combine the wild rice and chicken broth. Bring to a boil over medium heat.

Once boiling, reduce the heat to low and let it simmer for about 40 minutes, or until the wild rice is tender.

While the rice is cooking, heat a skillet over medium heat and add a splash of oil. Sauté the onions, carrots, celery, and garlic until they are soft, about 5-7 minutes.

Add the sautéed vegetables and sliced mushrooms to the pot with the wild rice. Stir to combine.
