Experience the comforting warmth of Uji, a traditional East African porridge made from maize flour and sweetened with honey and ripe banana. Perfect for a nourishing breakfast or a cozy evening snack.

Ingredients

  • 1 cup maize flour
  • 4 cups water
  • 1 pinch salt
  • 2 tablespoons sugar
  • 1 tablespoon milk powder
  • 1 banana ripe banana
  • 1 tablespoon honey

Method

    In a saucepan, bring 4 cups of water to a boil over medium heat.

    In a small bowl, mix 1 cup of maize flour with a little cold water to create a smooth paste.

    Once the water is boiling, gradually whisk in the maize flour paste to avoid lumps.

    Add a pinch of salt and sugar to taste, stirring constantly until the mixture thickens, about 5-7 minutes.
