Indulge in these delightful British tea cakes, bursting with sweet currants and a hint of cinnamon. Perfect for afternoon tea or a cozy weekend treat, they pair beautifully with a cup of your favorite brew.

Ingredients

  • 225 grams self-raising flour
  • 100 grams caster sugar
  • 100 grams unsalted butter
  • 1 large egg
  • 50 ml milk
  • 100 grams currants or raisins
  • 1 teaspoon ground cinnamon

Method

  1. 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

  2. 2

In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy.

  3. 3

Beat in the egg and mix until fully combined.

  4. 4

Sift in the self-raising flour and ground cinnamon, then fold in gently until just combined. Add the milk as needed to achieve a soft dough consistency.

  5. 5

Gently fold in the currants or raisins, if using.

  6. 6

Spoon tablespoonfuls of the mixture onto the prepared baking tray, leaving space between each for spreading.

  7. 7

Bake in the preheated oven for about 10 minutes, or until golden brown.

  8. 8

Remove from the oven and allow to cool slightly on a wire rack before serving.
