Indulge in this classic British Sticky Toffee Pudding, a warm, moist cake made with rich dates and drizzled with luscious toffee sauce. Perfect for cozy evenings or special gatherings, it's a sweet treat that warms the heart.

Ingredients

  • 200 g dates, pitted and chopped
  • 250 ml boiling water
  • 100 g unsalted butter
  • 150 g brown sugar
  • 2 large eggs
  • 200 g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 200 ml heavy cream
  • 100 g dark brown sugar

Method

    Preheat the oven to 180°C (350°F) and grease a baking dish.

    In a bowl, combine the chopped dates and boiling water. Allow to soak for about 15 minutes until soft.

    In a separate bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time.

    Add the soaked dates along with the soaking water to the butter mixture and mix well.

    Sift together the self-raising flour and baking powder, then fold into the mixture until just combined.

    Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a skewer inserted comes out clean.

    While the pudding is baking, prepare the sauce by heating the cream and dark brown sugar in a saucepan over low heat until dissolved.
