Indulge in the warm, spiced aroma of Speculaas Biscuits, a delightful Dutch treat that combines rich brown sugar and crunchy almonds. Perfect for cozy evenings or festive gatherings, these biscuits will transport you to a charming café in the Netherlands.

Ingredients

  • 3 cups flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 2 tablespoons speculaas spice
  • 1 pinch salt
  • 240 grams butter
  • 100 grams nibbed almonds

Method

  1. 1

Stir together first 5 ingredients well.

  2. 2

Cut the butter into blocks and rub into dry ingredients.

  3. 3

    Mix in nibbed almonds.

  4. 4

If you haven't a speculaas mould, you could roll out the dough and use your biscuit cutters. This mix is quite brittle, so to keep them thin and crisp requires some care. The biscuits do not spread with baking so may be placed quite close together.

  5. 5

Bake at 170°C for 20-30 minutes.

Notes

The biscuit mix is quite brittle, handle with care.

The combination of brown sugar and warm spices really elevates the flavor of these speculaas biscuits. I love how the baking powder gives them just the right amount of lift and crunch.
