- 1 cup brown sugar
- 1 tsp baking powder
- 2 tablespoons speculaas spice
- 1 pinch salt
- 240 grams butter
- 100 grams nibbed almonds

Stir together first 5 ingredients well.

Cut the butter into blocks and rub into dry ingredients.

Mix in nibbed almonds.

If you haven't a speculaas mould, you could roll out the dough and use your biscuit cutters. This mix is quite brittle, so to keep them thin and crisp requires some care. The biscuits do not spread with baking so may be placed quite close together.

Bake at 170°C for 20-30 minutes.
