- 1 large onion
- 2 cloves garlic
- 1 medium carrot
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1/2 teaspoon coriander

In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.

Add the minced garlic and diced carrot to the pot, and cook for another 2 minutes.

Stir in the rinsed red lentils, cumin, and coriander, mixing well.

Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 5-7 minutes, or until the lentils are tender.
