Warm up with a comforting bowl of Shorba, a fragrant Middle Eastern lentil soup enriched with cumin and coriander. Ideal for cozy weeknight dinners or as a nourishing starter for gatherings.

Ingredients

  • 1 cup red lentils
  • 1 large onion
  • 2 cloves garlic
  • 1 medium carrot
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander

Method

    In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.

    Add the minced garlic and diced carrot to the pot, and cook for another 2 minutes.

    Stir in the rinsed red lentils, cumin, and coriander, mixing well.
