- 1 cup all-purpose flour
- 2 large eggs
- 2 cups bread crumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup vegetable oil

Begin by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to about 1/4 inch thickness.

Set up a dredging station: in one bowl, place the flour mixed with salt and pepper. In a second bowl, beat the eggs. In a third bowl, place the bread crumbs.

Take each chicken breast and first coat it in the flour, shaking off the excess. Then dip it in the beaten eggs, allowing any excess to drip off. Finally, coat it in the bread crumbs, pressing gently to adhere.

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken pieces, frying in batches if necessary to avoid overcrowding the pan.

Fry each schnitzel for about 3-4 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.
