Experience the rich, smoky flavors of Salată de Vinete, a traditional Romanian eggplant salad blended with creamy mayonnaise and zesty onion. Ideal for a light lunch or as an appetizer at your next gathering.

Ingredients

  • 2 medium eggplants
  • 1 cup mayonnaise
  • 1 medium onion
  • 1 teaspoon salt
  • 1 teaspoon lemon juice

Method

    Preheat the oven to 200°C (400°F).

    Prick the eggplants with a fork several times and place them on a baking tray.

    Roast the eggplants in the preheated oven for about 30 minutes, or until the skin is charred and the flesh is tender.

    Remove the eggplants from the oven, let them cool, then peel off the skin and discard it. Chop the flesh finely.

    In a bowl, combine the chopped eggplant, mayonnaise, chopped onion, salt, and lemon juice. Mix well until smooth.
