- 1 cup sour cream
- 1 tablespoon vanilla extract
- 2 tablespoons honey
- 1 pinch salt

Pour the whole milk into a slow cooker or a large pot.

Set the slow cooker to the low setting, or heat the pot on low heat on the stove until the milk reaches a temperature of about 85°C (185°F).

Once the milk has reached the desired temperature, turn off the heat and let it cool to around 40°C (104°F).

Stir in the sour cream, honey, vanilla extract, and salt until well combined.

Cover the slow cooker or pot with a clean kitchen towel or lid, allowing it to sit undisturbed for 8-12 hours to ferment.

After fermentation, give the Ryazhenka a gentle stir and taste to see if it is sweet enough; adjust sweetness if necessary.

Transfer the finished Ryazhenka to a clean jar or container and refrigerate until chilled.
