Indulge in the creamy, tangy delight of Ryazhenka, a traditional Eastern European fermented milk drink. Perfect for a cozy breakfast or a refreshing afternoon treat, this wholesome beverage is sweetened with honey and infused with vanilla.

Ingredients

  • 1 liter whole milk
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • 2 tablespoons honey
  • 1 pinch salt

Method

  1. 1

Pour the whole milk into a slow cooker or a large pot.

  2. 2

Set the slow cooker to the low setting, or heat the pot on low heat on the stove until the milk reaches a temperature of about 85°C (185°F).

  3. 3

Once the milk has reached the desired temperature, turn off the heat and let it cool to around 40°C (104°F).

  4. 4

Stir in the sour cream, honey, vanilla extract, and salt until well combined.

  5. 5

Cover the slow cooker or pot with a clean kitchen towel or lid, allowing it to sit undisturbed for 8-12 hours to ferment.

  6. 6

After fermentation, give the Ryazhenka a gentle stir and taste to see if it is sweet enough; adjust sweetness if necessary.

  7. 7

Transfer the finished Ryazhenka to a clean jar or container and refrigerate until chilled.

  8. 8

Serve chilled, optionally with a sprinkle of cinnamon or additional honey on top.
