Indulge in the creamy, tangy delight of Ryazhenka, a traditional Eastern European fermented milk drink. Perfect for a cozy breakfast or a refreshing afternoon treat, this wholesome beverage is a comforting hug in a glass.
IngredientsWhat you need
- 1 liter whole milk
- 200 grams sour cream
- 1 tablespoon vanilla extract
- 2 tablespoons sugar
- 1 pinch salt
Method
- 1
Pour the whole milk into a heavy-bottomed pot.
- 2
Heat the milk over medium heat until it almost boils, then reduce the heat and simmer for about 1 hour, stirring occasionally to prevent sticking.
- 3
Once the milk has thickened and has a slightly caramel color, remove it from the heat and let it cool down to room temperature.
- 4
Once cooled, mix in the sour cream, sugar, vanilla extract, and salt until well combined.
- 5
Transfer the mixture to a glass jar or container, cover it loosely, and let it sit in a warm place for about 6-8 hours or overnight to ferment.
- 6
After fermentation, stir the Ryazhenka gently and refrigerate it for at least 2 hours before serving.
- 7
Serve chilled, and enjoy as a drink or use it as a base for other dishes.
