Indulge in these delightful, crunchy rusks, perfect for dipping in your morning coffee or enjoying as a snack. With a hint of sweetness from sugar and a nutty crunch, they make a cozy treat for any time of day.
IngredientsWhat you need
- 500 g all-purpose flour
- 200 g sugar
- 10 g baking powder
- 5 g salt
- 125 g butter
- 2 large eggs
- 250 ml buttermilk
- 100 g nuts or dried fruit
Method
- 1
Preheat your oven to 180°C (350°F). Grease a baking dish or line it with parchment paper.
- 2
In a large mixing bowl, combine the sifted flour, sugar, baking powder, and salt. Mix well.
- 3
In another bowl, whisk together the melted butter, beaten eggs, and buttermilk until well combined.
- 4
Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the nuts or dried fruit.
- 5
Transfer the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for about 60 minutes or until golden brown.
- 6
Remove from the oven and allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- 7
Once completely cool, slice the baked mixture into thick strips, then arrange the strips upright on a baking sheet.
- 8
Return the rusks to the oven and bake at a lower temperature of 100°C (210°F) for an additional 1-2 hours until dry and crisp. Let them cool completely before storing.
