- 1 whole chicken (about 1.5 kg)
- 2 tbsp olive oil
- 1 tbsp sea salt
- 1 tbsp black pepper
- 4 cloves garlic
- 1 lemon halved
- 4 sprigs fresh rosemary
- 500 g potatoes

Preheat your oven to 220°C (428°F).

Rinse the chicken inside and out, and pat dry with paper towels.

Rub the chicken all over with olive oil, then season generously with sea salt and black pepper.

Stuff the cavity of the chicken with smashed garlic, lemon halves, and fresh rosemary.

Place the chicken in a roasting pan, and surround it with potato wedges.

Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is golden brown and cooked through (juices should run clear).

Let the chicken rest for 10 minutes before carving. Serve with roasted potatoes.
