Experience the rich, aromatic flavors of Indonesian Rendang, a slow-cooked beef dish simmered in creamy coconut milk and fragrant spices. Perfect for a cozy family dinner or a festive gathering.

Ingredients

  • 1 kg beef (chuck or brisket)
  • 400 ml coconut milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons rendang spice paste
  • 3 leaves kaffir lime leaves
  • 1 stick lemongrass
  • 2 tablespoons brown sugar
  • 1 tablespoon salt

Method

  1. 1

Heat the vegetable oil in a large pot over medium heat.

  2. 2

Add the rendang spice paste and sauté for about 2-3 minutes until fragrant.

  3. 3

Add the beef cubes to the pot and brown them on all sides.

  4. 4

Pour in the coconut milk, then add the kaffir lime leaves, bruised lemongrass, brown sugar, and salt.

  5. 5

Bring the mixture to a boil, then reduce the heat to low and simmer for about 2-3 hours, stirring occasionally, until the sauce thickens and the beef is tender.

  6. 6

Taste and adjust the seasoning with more salt or sugar if necessary.

  7. 7

Serve hot with steamed rice or as part of a larger meal.
