- 2 cups Basmati rice
- 453.6 g chicken (cut into pieces)
- 1 large onion (finely chopped)
- 4 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 1 tbsp pilau masala
- 4 cups water or chicken broth
- 3 tbsp vegetable oil
- 1 small bay leaf
- Salt to taste salt
Method

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.

Add the minced garlic and grated ginger to the pot. Cook for another 2 minutes until fragrant.

Stir in the chicken pieces and cook until browned on all sides.

Add the pilau masala, bay leaf, and salt. Mix well to coat the chicken with the spices.

Add the soaked and drained Basmati rice, and stir gently to combine with the chicken and spices.

Pour in the water or chicken broth and bring to a boil. Reduce heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the rice is cooked and the liquid is absorbed.

Once cooked, remove from heat and let it sit covered for an additional 10 minutes before serving.

Fluff the rice with a fork and serve hot, garnished with fresh cilantro if desired.
