Indulge in the sweet, rich flavors of Pasca, a traditional Eastern European Easter bread. With its fluffy texture and hints of lemon and vanilla, it's perfect for festive gatherings or a cozy family brunch.

- 250 ml milk
- 200 g sugar
- 100 g butter
- 5 g salt
- 7 g dry yeast
- 3 large eggs
- 250 g ricotta cheese
- 1 tsp vanilla extract

In a small bowl, dissolve the yeast in warm milk with a teaspoon of sugar. Let it sit for 10-15 minutes until frothy.

In a large mixing bowl, combine flour, sugar, and salt. Make a well in the center and add the frothy yeast mixture, melted butter, and beaten eggs. Mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let it rise for about 1 hour or until doubled in size.

Meanwhile, in another bowl, combine ricotta cheese, vanilla extract, lemon zest, and an egg. Mix until smooth to create the filling.

Once the dough has risen, punch it down and divide it into two parts: one larger for the base and one smaller for the top.

Roll out the larger piece and place it in a greased round baking pan. Spread the cheese filling evenly over the dough.

Roll out the smaller piece into a circle and place it over the filling. Pinch the edges to seal and cut a few slits on top.
