Ingredients

  • 200 g Oka cheese
  • 2 cups potatoes
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon butter
  • 1 teaspoon fresh thyme

Method

  1. 1

Preheat your oven to 350°F (175°C).

  2. 2

In a saucepan, cook the diced potatoes in boiling salted water until tender, about 15-20 minutes. Drain and set aside.

  3. 3

In a mixing bowl, combine the cooked potatoes and heavy cream, mashing until smooth. Add salt, pepper, and fresh thyme if using.

  4. 4

Grease a baking dish with butter and layer the mashed potato mixture at the bottom.

  5. 5

Slice the Oka cheese and layer it evenly over the mashed potatoes.

  6. 6

Bake in the preheated oven for 20-30 minutes, or until the cheese is bubbly and golden brown.

  7. 7

Remove from the oven and let it cool for a few minutes before serving.

  8. 8

Serve warm as a comforting main dish or side.
