Ingredients

  • 500 grams fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • to taste salt and black pepper
  • 2 tablespoons fresh dill, chopped

Method

    In a large pot, heat the olive oil over medium heat.

    Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and grated carrot, cooking for another 2-3 minutes.

    Add the sliced mushrooms and cook until they are soft and have released their moisture, about 8-10 minutes.

    Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.

    Stir in the heavy cream, salt, and black pepper to taste. Let simmer for an additional 5 minutes.
