- 2 kg Mud Crab
- 1 cup sea salt
- 2 litres water
- 1 tablespoon olive oil
- 3 cloves garlic
- 1 tablespoon butter
- 1 tablespoon lemon juice
- to taste black pepper
Method

Fill a large pot with 2 litres of water and add 1 cup of sea salt. Bring the water to a rolling boil.

Carefully add the live Mud Crabs to the boiling water. Cover the pot and cook for 12-15 minutes, or until the crabs turn bright orange.

Once cooked, remove the crabs from the pot and let them cool slightly. Crack the shells to access the meat.

In a frying pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Add the crab meat to the frying pan and drizzle with 1 tablespoon of lemon juice. Toss gently to combine and heat through for 3-4 minutes.

Season with freshly ground black pepper to taste. Serve immediately with extra lemon wedges if desired.
