- 1 cup passion fruit pulp
- 1 can sweetened condensed milk
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 1 tablespoon unflavored gelatin
- 4 tablespoons water
- 1 cup sugar for garnish

In a small bowl, dissolve the gelatin in 4 tablespoons of water. Let it sit for about 5 minutes until it blooms.

In a blender, combine the passion fruit pulp and sweetened condensed milk. Blend until smooth.

Gently heat the bloomed gelatin in the microwave for about 10 seconds or until it is completely dissolved. Do not let it boil.

Add the dissolved gelatin to the blender with the passion fruit mixture and blend again to combine.

In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the passion fruit mixture until well combined.
