Warm your soul with this comforting Japanese miso soup, brimming with silky tofu, vibrant green onions, and umami-rich miso. Ideal for a cozy weeknight dinner or a soothing start to your day.

Ingredients

  • 4 cups water
  • 3 tablespoons miso paste
  • 1 cup tofu
  • 1 cup green onions
  • 1 cup wakame seaweed
  • 1 tablespoon soy sauce

Method

    In a medium pot, bring the filtered water to a gentle simmer over medium heat.

    While the water is heating, soak the wakame seaweed in a small bowl of water for about 5 minutes, then drain and set aside.

    Once the water is simmering, add the cubed tofu and rehydrated wakame to the pot.

    In a small bowl, mix the miso paste with a ladle of the hot broth from the pot until smooth, then stir it back into the soup.

    If desired, add soy sauce to enhance the flavor. Stir well to combine.
