- 2 cups basmati rice
- 4 tablespoons ghee
- 1 large onion
- 4 cloves garlic
- 2 teaspoons Mandi spice mix
- 4 cups water
- Salt to taste salt
Method

Heat the ghee in a large pot over medium heat. Add the chopped onion and sauté until golden brown.

Add the minced garlic and sauté for an additional minute until fragrant.

Add the chicken pieces and season with salt and Mandi spice mix. Cook until the chicken is browned on all sides.

Pour in the water and bring to a boil. Reduce the heat, cover, and simmer for about 30 minutes until the chicken is cooked through.

Remove the chicken and set aside. Measure the broth and add water if necessary to ensure you have 4 cups.

Add the soaked basmati rice to the broth, bring to a boil, then reduce heat, cover, and cook for about 20 minutes or until the rice is tender.

While the rice is cooking, grill or roast the chicken pieces until they are slightly charred and crispy.

Once the rice is cooked, fluff it with a fork and serve topped with the grilled chicken.
