Experience the vibrant flavors of the Middle East with Machboos, a fragrant rice dish simmered with tender chicken, aromatic spices, and a hint of garlic. Perfect for a cozy family dinner or a festive gathering.

Ingredients

  • 2 cups basmati rice
  • 500 g chicken
  • 1 large onion
  • 3 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp machboos spice mix
  • 4 cups water
  • 2 tbsp vegetable oil
  • 1 tbsp salt

Method

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.

    Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.

    Stir in the chicken pieces and cook until they are browned on all sides.

    Add the machboos spice mix and salt, stirring well to coat the chicken. Cook for another 5 minutes.

    Pour in the water and bring the mixture to a boil. Reduce heat, cover, and simmer for about 20 minutes until the chicken is cooked through.

    Once the chicken is done, remove it from the pot and set aside. Add the soaked rice to the pot and stir well.

    Place the chicken back on top of the rice, cover the pot, and cook on low heat for about 30 minutes, or until the rice is cooked and the water is absorbed.

    Fluff the rice with a fork and serve hot, garnished with your choice of roasted nuts or raisins if desired.
