Experience the rich flavors of Portuguese cuisine with this succulent Leitão, a whole suckling pig marinated in a blend of sea salt, paprika, and garlic. Perfect for festive gatherings or special occasions, it promises to impress your guests.
IngredientsWhat you need
- 1 whole suckling pig
- 3 tablespoons sea salt
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 cup dry white wine
- 2 tablespoons olive oil
- 1 tablespoon black pepper
- 1 tablespoon bay leaves
Method
- 1
Prepare the suckling pig by cleaning it thoroughly and patting it dry with paper towels.
- 2
In a bowl, mix together sea salt, paprika, garlic powder, black pepper, and crushed bay leaves.
- 3
Rub the spice mixture all over the pig, making sure to get it inside the cavity as well.
- 4
Place the pig in a large container, pour the white wine over it, cover, and let it marinate in the refrigerator for at least 12 hours, preferably overnight.
- 5
Preheat the grill to a medium heat. Remove the pig from the marinade and let it come to room temperature.
- 6
Place the pig on the grill, skin side up. Cook for approximately 3-4 hours, basting with olive oil every hour, until the meat is tender and the skin is crispy.
- 7
Once cooked, remove from the grill and allow it to rest for about 20 minutes before carving.
- 8
Serve the leitão with traditional accompaniments like roasted potatoes and a green salad.
