Ingredients

  • 1 whole suckling pig
  • 3 tablespoons sea salt
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 1 tablespoon black pepper
  • 1 tablespoon bay leaves

Method

    Prepare the suckling pig by cleaning it thoroughly and patting it dry with paper towels.

    In a bowl, mix together sea salt, paprika, garlic powder, black pepper, and crushed bay leaves.

    Rub the spice mixture all over the pig, making sure to get it inside the cavity as well.

    Place the pig in a large container, pour the white wine over it, cover, and let it marinate in the refrigerator for at least 12 hours, preferably overnight.

    Preheat the grill to a medium heat. Remove the pig from the marinade and let it come to room temperature.

    Place the pig on the grill, skin side up. Cook for approximately 3-4 hours, basting with olive oil every hour, until the meat is tender and the skin is crispy.
