Indulge in the warm, spiced flavors of traditional Lebkuchen, a German gingerbread cookie infused with honey, nuts, and candied citrus. Perfect for holiday gatherings or cozy winter evenings with loved ones.

- 2 cups honey
- 1 cup brown sugar
- 1 cup almond meal
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon nutmeg
- 1 cup chopped nuts
- 1 cup candied citrus peel
- 1 cup glaze

Preheat your oven to 180°C (350°F) and prepare a baking sheet lined with parchment paper.

In a saucepan, combine honey and brown sugar over low heat until melted and mixed well. Remove from heat and let cool slightly.

In a large mixing bowl, combine almond meal, flour, baking powder, cinnamon, cloves, and nutmeg.

Add the cooled honey mixture to the dry ingredients and mix well. Stir in the chopped nuts and candied citrus peel until evenly distributed.

Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each slightly.
