Warm your soul with this hearty lamb soup, featuring tender lamb shoulder, aromatic garlic, and a hint of lemon. Perfect for cozy weeknight dinners or gatherings with loved ones, it’s a comforting embrace in a bowl.

Ingredients

  • 500 grams lamb shoulder, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 teaspoon ground cumin
  • 1 liter water or lamb broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon juiced

Method

  1. 1

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

  2. 2

Add the minced garlic and sauté for an additional minute until fragrant.

  3. 3

Add the cubed lamb shoulder to the pot, browning the meat on all sides for about 5-7 minutes.

  4. 4

Stir in the sliced carrots, chopped celery, and ground cumin, cooking for another 5 minutes.

  5. 5

Pour in the water or lamb broth, then add salt and black pepper. Bring the soup to a boil.

  6. 6

Reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the lamb is tender.

  7. 7

Once the lamb is tender, taste the soup and adjust seasoning if necessary. Stir in the lemon juice just before serving.

  8. 8

Serve hot, garnished with fresh herbs if desired.
