- 500 grams lamb shoulder, cut into cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 teaspoon ground cumin
- 1 liter water or lamb broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon juiced

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

Add the minced garlic and sauté for an additional minute until fragrant.

Add the cubed lamb shoulder to the pot, browning the meat on all sides for about 5-7 minutes.

Stir in the sliced carrots, chopped celery, and ground cumin, cooking for another 5 minutes.

Pour in the water or lamb broth, then add salt and black pepper. Bring the soup to a boil.

Reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the lamb is tender.
