Dive into a bowl of vibrant Malaysian laksa, where tender prawns and chicken swim in a creamy coconut broth infused with aromatic spices. Perfect for a cozy weeknight dinner or a special gathering with loved ones.

Ingredients

  • 200 grams rice noodles
  • 200 grams prawns
  • 200 grams chicken breast
  • 1 cup coconut milk
  • 2 tablespoons laksa paste
  • 2 cups chicken stock
  • 2 hard-boiled eggs eggs
  • 1 cup bean sprouts
  • 2 tablespoons fresh coriander

Method

  1. 1

In a large pot, heat a little oil over medium heat and add the laksa paste. Stir-fry for a few minutes until fragrant.

  2. 2

Pour in the chicken stock and bring to a simmer. Add the chicken slices and cook until they are just done.

  3. 3

Add the prawns and cook until they turn pink, about 2-3 minutes.

  4. 4

Stir in the coconut milk and bring the soup back to a gentle simmer. Adjust seasoning if necessary.

  5. 5

In serving bowls, place a portion of the soaked rice noodles. Ladle the laksa soup over the noodles.

  6. 6

Garnish with halved hard-boiled eggs, bean sprouts, and fresh coriander.

  7. 7

Serve hot and enjoy your authentic Singapore laksa!
