  • 500 grams lamb or beef kidneys
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon juice
  • 4 sticks skewers

    Start by cleaning the kidneys thoroughly and cut them in half. Remove any fat or sinew.
