- 4 medium eggplants
- 300 grams ground beef
- 1 medium onion
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup water

Preheat your oven to 180°C (350°F).

Cut the eggplants in half lengthwise and scoop out some of the flesh to create a boat-like shape. Sprinkle with salt and let them sit for about 15 minutes.

In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned. Stir in the tomato paste, salt, and black pepper.

Rinse the eggplants and pat them dry. Fill each eggplant half with the beef mixture.

Place the stuffed eggplants in a baking dish and pour water into the dish. Cover with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, allowing the tops to brown slightly.

Serve warm, garnished with fresh herbs if desired.
