- 1.5 kg beef shank
- 2 liters water
- 2 pieces carrots
- 1 piece celery root
- 1 piece onion
- 3 cloves garlic
- 3 pieces peppercorns
- 2 pieces bay leaves

In a large pot, combine the beef shank and water. Bring to a boil over high heat.

Once boiling, reduce the heat to low and skim off any foam that rises to the surface.

Add the carrots, celery root, onion, garlic, peppercorns, bay leaves, and salt to the pot.

Cover the pot and let it simmer gently for about 2 hours, or until the meat is tender.

After cooking, remove the beef and vegetables from the broth. Strain the broth through a fine sieve.

Taste the broth and adjust the seasoning with more salt if needed.
