Ingredients

  • 500 g strong white bread flour
  • 75 g caster sugar
  • 10 g salt
  • 10 g instant yeast
  • 300 ml whole milk
  • 40 g unsalted butter
  • 1 large egg
  • 150 g mixed dried fruit
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 cup flour
  • 1 cup water

Method

    In a large mixing bowl, combine the bread flour, caster sugar, salt, instant yeast, ground cinnamon, and ground nutmeg.

    In a separate bowl, mix the warmed milk, melted butter, and beaten egg together.

    Make a well in the dry ingredients and pour in the wet mixture. Stir until a dough forms.

    Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Add the mixed dried fruit and knead until evenly distributed.

    Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Preheat your oven to 220°C (428°F). Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place on a baking tray lined with parchment paper.

    For the cross, mix the flour and water to create a thick paste. Pipe the mixture in a cross shape on each bun.

    Bake for 20 minutes or until golden brown. Remove from the oven and brush with a sugar syrup made from equal parts sugar and water to give them a sheen.
