- 2 tablespoons olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1 cup chickpeas, cooked
- 1 can crushed tomatoes (400g)
- 1 liter vegetable broth
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1 cup fresh parsley, chopped
- 1 cup fresh cilantro, chopped
- 1 lemon for serving
Method

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic, chopped celery, and carrots. Cook for another 5 minutes.

Add the cooked chickpeas, crushed tomatoes, vegetable broth, cumin, and cinnamon. Bring to a boil.
