Experience the heartwarming flavors of Middle Eastern cuisine with Harees, a comforting dish of tender chicken or lamb simmered with cracked wheat and aromatic spices. Perfect for family gatherings or festive occasions.
IngredientsWhat you need
- 1 cup wheat (hulled or cracked)
- 1 kg chicken or lamb
- 1 medium onion
- 4 cups water
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons ghee or clarified butter
- 1 teaspoon ground cumin
Method
- 1
In a large pot, combine the soaked wheat, chicken or lamb, chopped onion, and water. Bring to a boil.
- 2
Reduce the heat to low, cover, and let it simmer for about 2 to 3 hours, or until the meat and wheat are tender.
- 3
Stir occasionally and add more water if needed to maintain a stew-like consistency.
- 4
Once the meat is cooked, remove it and shred it into pieces. Return the shredded meat to the pot.
- 5
Add salt, ground black pepper, and ground cumin (if using), and stir well.
- 6
In a small pan, melt the ghee and pour it over the harees for added flavor just before serving.
- 7
Serve hot, garnished with additional spices or fried onions if desired.
