Experience the heartwarming flavors of Middle Eastern cuisine with this hearty harees, a comforting blend of tender lamb, wholesome barley, and aromatic spices. Ideal for cozy family dinners or festive gatherings.

Ingredients

  • 1 cup whole wheat barley
  • 1 kg lamb or chicken
  • 6 cups water
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tbsp ghee or clarified butter
  • 1 tbsp ground cumin
  • 1 tbsp sliced almonds

Method

  1. 1

In a large pot, combine the soaked barley, lamb or chicken, and water.

  2. 2

Bring the mixture to a boil, then reduce to a simmer and cook for about 2-3 hours until the meat is tender.

  3. 3

Remove the meat, and let it cool slightly. Shred the meat into smaller pieces.

  4. 4

Use an immersion blender or a traditional hand grinder to blend the barley and cooking liquid until it reaches a smooth, porridge-like consistency.

  5. 5

Add the shredded meat back into the barley mixture, season with salt, black pepper, and cumin. Stir well and cook for another 30 minutes.

  6. 6

Serve hot, drizzled with ghee or clarified butter, and garnish with sliced almonds.

  7. 7

Enjoy your traditional Harees with warm bread or on its own!

I loved how the tender meat complemented the wholesome barley perfectly in this dish.
