Ingredients

  • 1 whole chicken
  • 1 cup jasmine rice
  • 4 cups chicken broth
  • 4 cloves garlic
  • 2 slices ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil

Method

    Bring a large pot of water to a boil. Add the whole chicken, ginger, and garlic. Reduce the heat to a simmer and cook for 30-40 minutes until the chicken is fully cooked.

    Remove the chicken from the pot and let it cool slightly. Reserve the broth for cooking rice and for serving.

    In a separate pan, heat a tablespoon of oil and sauté the washed jasmine rice until fragrant. Add 2 cups of the reserved chicken broth and bring to a boil. Cover and reduce to a low heat, cooking for about 15 minutes until the rice is fluffy.

    Once the chicken has cooled, chop it into serving pieces. Drizzle sesame oil over the chicken pieces and serve with sliced cucumbers.
