Savor the vibrant flavors of this Middle Eastern Foul, a hearty dish of fava beans, garlic, and cumin, drizzled with olive oil and fresh lemon. Ideal for a cozy weeknight dinner or a delightful brunch with friends.

Ingredients

  • 1 cup dried fava beans
  • 4 cups water
  • 3 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 lemon juiced
  • to taste salt
  • to taste pepper

Method

    Rinse the soaked fava beans under cold water and place them in a pot.

    Add 4 cups of water to the pot and bring it to a boil. Reduce the heat and let it simmer for about 30-40 minutes or until the beans are tender.

    In a separate pan, heat olive oil over medium heat and sauté the chopped onion until it becomes translucent.

    Add minced garlic and ground cumin to the onions and cook for another 2 minutes until fragrant.

    Once the fava beans are cooked, drain them and add them to the onion mixture. Mix well and season with salt, pepper, and lemon juice.
