Savor the vibrant flavors of the Mediterranean with this Fish Couscous, featuring tender white fish, aromatic spices, and fluffy couscous. Ideal for a cozy weeknight dinner or a delightful weekend gathering.
IngredientsWhat you need
- 500 grams white fish fillets (like cod or haddock)
- 1 cup couscous
- 2 tablespoons olive oil
- 1 medium onion
- 2 cloves garlic
- 1 medium tomato
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 cups fish stock
- salt to taste salt
- pepper to taste black pepper
Method
- 1
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- 2
Add the chopped tomato, ground cumin, paprika, salt, and black pepper. Stir and cook for about 5 minutes until the tomato softens.
- 3
Pour in the fish stock and bring to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes.
- 4
Add the fish pieces to the pot and cook for another 10-15 minutes, until the fish is cooked through and flakes easily.
- 5
In a separate bowl, prepare the couscous by adding it to a large bowl. Pour boiling water over it, cover, and let it steam for about 5 minutes.
- 6
Fluff the couscous with a fork, then serve it on plates topped with the fish and tomato sauce from the pot.
- 7
Garnish with fresh herbs if desired, and enjoy your delicious Fish Couscous!
