- 500 grams white fish fillets (cod or haddock)
- 1 cup all-purpose flour
- 1 cup ice-cold sparkling water
- 1 teaspoon baking powder
- 4 large potatoes
- 2 liters vegetable oil

Peel and cut the potatoes into thick strips. Soak them in cold water for about 30 minutes to remove excess starch.

In a large bowl, combine the flour, baking powder, and a pinch of salt. Gradually whisk in the ice-cold sparkling water until you have a smooth batter.

Heat the vegetable oil in a deep fryer or a large pot to 180°C (350°F).

Drain the potatoes and pat them dry with a towel. Fry the chips in the hot oil until they are golden and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Dust the fish fillets lightly in flour, then dip them into the batter. Carefully place them into the hot oil and fry for about 4-5 minutes or until golden brown and crispy.

Remove the fried fish and chips from the oil and drain on paper towels. Season with salt to taste.
