Indulge in these delightful Middle Eastern fatayer, filled with vibrant spinach and aromatic onions, all wrapped in a tender, golden crust. Perfect for a cozy weeknight dinner or a festive gathering with friends.

Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet active dry yeast
  • 1 cup spinach, chopped
  • 1 medium onion, finely chopped
  • 1 teaspoon black pepper

Method

    In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.

    In a large mixing bowl, combine flour and salt, then add the yeast mixture and olive oil. Knead until smooth.

    Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

    In a skillet, sauté onions until translucent, then add chopped spinach and black pepper. Cook until spinach is wilted.

    Preheat the oven to 200°C (400°F). Roll out the dough on a floured surface and cut into circles.
