Indulge in the warmth of Middle Eastern flavors with these delightful spinach and feta fatayer. Perfect for a cozy weeknight dinner or a festive gathering, these savory pastries are sure to impress your guests.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm water
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 teaspoon black pepper

Method

  1. 1

In a large bowl, mix the flour, salt, and sugar together.

  2. 2

Add the warm water and vegetable oil to the dry ingredients. Knead until a smooth dough forms, about 5-7 minutes.

  3. 3

Cover the dough with a damp cloth and let it rest for 30 minutes.

  4. 4

In a separate bowl, combine the chopped spinach, feta cheese, and black pepper to create the filling.

  5. 5

Preheat the oven to 200°C (400°F).

  6. 6

Roll out the dough on a floured surface to about 1/8 inch thickness and cut into circles, about 10 cm in diameter.

  7. 7

Place a spoonful of the filling in the center of each circle, fold the dough over to form a triangle, and seal the edges by pressing with a fork.

  8. 8

Arrange the fatayer on a baking sheet and bake for 20 minutes or until golden brown.
