Savor the vibrant flavors of Middle Eastern cuisine with these crispy, golden falafels made from chickpeas, garlic, and fresh parsley. Perfect for a weeknight dinner or a festive gathering, serve them in pita with tahini sauce for a delightful meal.
IngredientsWhat you need
- 1 cup dried chickpeas
- 1 small onion
- 3 cloves garlic
- 1 bunch fresh parsley
- 1 tsp ground cumin
- 1 tsp baking powder
- 2 tbsp flour
- Salt to taste salt
- Oil for frying vegetable oil
Method
- 1
Soak the dried chickpeas in water overnight. Drain and rinse before using.
- 2
In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, baking powder, and salt. Pulse until well mixed but not pureed.
- 3
Transfer the mixture to a bowl and add flour. Mix until it holds together well.
- 4
Shape the mixture into small balls or patties, about the size of a golf ball.
- 5
Heat oil in a deep frying pan over medium heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes per side.
- 6
Remove the falafel and place them on paper towels to drain excess oil.
- 7
Serve hot with tahini sauce, pita bread, and fresh vegetables.
