Warm up with a comforting bowl of Erbsensuppe, a traditional German pea soup brimming with earthy flavors from green peas, fresh vegetables, and a hint of garlic. Ideal for cozy weeknight dinners or a hearty lunch.
IngredientsWhat you need
- 300 g dried green peas
- 1 medium onion
- 2 cloves garlic
- 1 medium carrot
- 2 stalks celery
- 1 liter vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Method
- 1
Heat the olive oil in a large pot over medium heat.
- 2
Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- 3
Stir in the soaked peas and pour in the vegetable broth. Bring to a boil.
- 4
Reduce the heat to low and let it simmer for about 30-35 minutes, or until the peas are tender.
- 5
Use an immersion blender to purée the soup until smooth, or leave it chunky if preferred.
- 6
Season with salt and pepper to taste. Serve hot.
