- 2 cups all-purpose flour
- 1/2 cup unsalted butter
- 1/4 cup cold water
- 1 tablespoon oil
- 2 medium potatoes
- 1/2 cup green peas
- 1 tablespoon curry powder
- 1/2 teaspoon salt

In a large bowl, combine the all-purpose flour and chilled butter. Mix until the mixture resembles coarse crumbs.

Add cold water gradually, mixing until the dough comes together. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.

In a pan, heat oil over medium heat. Add diced potatoes and cook until slightly tender, about 5 minutes.

Add green peas, curry powder, and salt to the potatoes. Mix well and cook for another 5-7 minutes, until the potatoes are fully cooked. Set aside to cool.

Remove the dough from the refrigerator. Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a pastry cutter.

Place a spoonful of the potato filling in the center of each dough circle. Fold over and seal the edges with a fork or by pinching.

Heat oil in a deep pan for frying. Fry the curry puffs until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
