Savor the rich flavors of Georgian cuisine with Chicken Tabaka, a crispy-skinned, herb-infused roast chicken. Perfect for a cozy weeknight dinner or a festive gathering, this dish is sure to impress your family and friends.
IngredientsWhat you need
- 1 whole chicken
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon garlic
- 4 tablespoons butter
- 2 tablespoons vinegar
- 1 lemon juice
- 2 sprigs fresh parsley
Method
- 1
Preheat your oven to 200°C (400°F).
- 2
Spatchcock the chicken by removing the backbone and flattening it out. Use a sharp knife or kitchen scissors.
- 3
Season the chicken generously with salt, black pepper, and minced garlic on both sides. Drizzle with vinegar and lemon juice.
- 4
In a large skillet, melt the butter over medium heat. Place the chicken skin-side down, pressing it down with a heavy pan or cast iron skillet.
- 5
Cook for about 15-20 minutes until the skin is golden and crispy. Flip the chicken and transfer the skillet to the preheated oven.
- 6
Bake for an additional 20-25 minutes until the chicken is cooked through (internal temperature should reach 75°C or 165°F).
- 7
Remove the chicken from the oven and let it rest for a few minutes before carving.
- 8
Garnish with fresh parsley and serve hot.
