Ingredients

  • 1 kg whole chicken
  • 2 liters water
  • 2 medium onions
  • 3 cloves garlic
  • 2 medium carrots
  • 2 sticks celery
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 bunch fresh parsley

Method

    In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sauté until the onions become translucent.

    Add the chicken pieces into the pot and stir for about 5 minutes until they are lightly browned.

    Pour in the water, bring it to a boil, and then reduce the heat to a simmer.

    Skim off any foam that forms on the surface, then add the sliced carrots, celery, ground cumin, salt, and black pepper.

    Cover the pot and let it simmer for about 30 minutes or until the chicken is cooked through and tender.

    Once cooked, remove the chicken pieces from the pot, shred the meat, and discard the bones and skin.
