- 1 kg whole chicken
- 2 cups basmati rice
- 2 tablespoons oil
- 1 large onion
- 4 cloves garlic
- 1 tablespoon Mandi spice mix
- 4 cups water

Method

Heat oil in a large pot over medium heat. Add chopped onions and sauté until golden brown.

Add minced garlic to the pot and cook for about 1 minute until fragrant.

Add the chicken pieces to the pot. Season with salt and Mandi spice mix. Cook until the chicken is browned on all sides.

Pour in water and bring to a boil. Reduce heat and let it simmer for about 30 minutes until the chicken is cooked through.

Remove the chicken from the pot and set aside. Strain the broth and measure out 4 cups of it for cooking the rice.

Bring the broth back to a boil. Add the soaked basmati rice and stir well. Cover and cook on low heat for about 20 minutes until the rice is fluffy and the liquid is absorbed.

In the meantime, grill or bake the chicken until crispy. Serve the rice on a large platter, place the chicken on top, and garnish with fried onions or nuts if desired.
