- 3.8 l whole milk
- 1/4 cup white vinegar
- 1 teaspoon salt
- 1 teaspoon rennet
- 1 cup water

In a large pot, heat the milk over medium heat until it reaches 190°F (88°C), stirring gently.

Remove the pot from heat and slowly add the white vinegar (or lemon juice), stirring gently to combine.

Let the mixture sit for about 5 minutes. The curds will begin to separate from the whey.

Line a colander with cheesecloth and pour the curds and whey into it, allowing the whey to drain.

Rinse the curds under cold water to remove excess acidity and sprinkle salt over them.

Mix the curds gently to incorporate the salt. If using rennet, dilute it in warm water and stir it in at this stage.

Let the curds sit for another 5 minutes, then enjoy them fresh or use them in your favorite dishes.
