Experience the joy of homemade cheese curds, a delightful treat that captures the essence of fresh dairy. Perfect for snacking or adding to your favorite dishes, these curds are a fun weekend project for cheese lovers.

Ingredients

  • 3.8 l whole milk
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1 teaspoon rennet
  • 1 cup water

Method

  1. 1

In a large pot, heat the milk over medium heat until it reaches 190°F (88°C), stirring gently.

  2. 2

Remove the pot from heat and slowly add the white vinegar (or lemon juice), stirring gently to combine.

  3. 3

Let the mixture sit for about 5 minutes. The curds will begin to separate from the whey.

  4. 4

Line a colander with cheesecloth and pour the curds and whey into it, allowing the whey to drain.

  5. 5

Rinse the curds under cold water to remove excess acidity and sprinkle salt over them.

  6. 6

Mix the curds gently to incorporate the salt. If using rennet, dilute it in warm water and stir it in at this stage.

  7. 7

Let the curds sit for another 5 minutes, then enjoy them fresh or use them in your favorite dishes.
